Prawn noodles with kale

Prawn noodles with kale
Quick and easy to prepare lunch/dinner idea will blow your mind! It’s aromatic and full of flavour! This is the perfect dish for lazy cookers just like me ☺
Main ingredients
noodles, Prawn


  • 200 g           Prawns
  • 200 g           Tomatoes
  • 1 handfuls   Kale
  • 130 ml         Coconut milk
  • 1-2 cloves   Garlic
  • 1 cm            Ginger
  • 1/2               Chilli pepper
  • 1                  Small shallot
  • 1 bag           Konjak Noodles (or palm heart noodles)
  • 1 tbs            Ghee/butter
  • 2 tbs            Olive oil
  • 1 bunch       Fresh basil
  • ½ tsp           Himalayan salt
  • Lemon juice (optionally)


  1. Garlic, onion, ginger, peel and dice. Slice the chillies (remove the seeds if you prefer less spicy).
  2. Preheat 1 tablespoon of ghee/butter and transfer the chopped vegetables. Fry for 3-4 minutes, stirring frequently.
  3. Add the prawns to the pan. Cut the kale, remove hard parts. Fry the whole thing for 5 minutes.
  4. Prepare konjak noodles according to package instructions and place in a bowl. 
  5. Add tomatoes, coconut milk and let it steam for about 3 minutes. Add olive oil and season to taste. Feel free to get creative with the spices you use – pick the ones you like! Dice the basil and add to the pan, mix. Serve with konjak noodles. Enjoy!
