Ingredients
- 200 g Prawns
- 200 g Tomatoes
- 1 handfuls Kale
- 130 ml Coconut milk
- 1-2 cloves Garlic
- 1 cm Ginger
- 1/2 Chilli pepper
- 1 Small shallot
- 1 bag Konjak Noodles (or palm heart noodles)
- 1 tbs Ghee/butter
- 2 tbs Olive oil
- 1 bunch Fresh basil
- ½ tsp Himalayan salt
- Lemon juice (optionally)
INSTRUCTIONS
- Garlic, onion, ginger, peel and dice. Slice the chillies (remove the seeds if you prefer less spicy).
- Preheat 1 tablespoon of ghee/butter and transfer the chopped vegetables. Fry for 3-4 minutes, stirring frequently.
- Add the prawns to the pan. Cut the kale, remove hard parts. Fry the whole thing for 5 minutes.
- Prepare konjak noodles according to package instructions and place in a bowl.
- Add tomatoes, coconut milk and let it steam for about 3 minutes. Add olive oil and season to taste. Feel free to get creative with the spices you use – pick the ones you like! Dice the basil and add to the pan, mix. Serve with konjak noodles. Enjoy!
