125g Sweet Versatile Mix – The Best Free From
- 2 Medium eggs
- 2/3 cup Warm milk of your choice (I used unsweetened coconut)
- 25g Melted butter (regular unsalted, dairy free butter or coconut oil)
INSTRUCTIONS
- Put the mix into the mixing bowl (I have used the strainer to get rid of lumps)
- Beat the eggs until light and fluffy
- Add the milk and melted butter to the mixing bowl with dry ingredients and mix with a hand or stand mixer until fully combined
- Add beaten eggs and whisk it for a minute at least
- Let the mixture rest for a minute.
- Warm a pan over medium heat. Use butter, ghee or coconut oil to grease the pan before placing each pancake. Cook them covered by a lid most of the way on one side, about 2 minutes on low heat, flip and cook for another minute.
- Add the toppings of your choice and enjoy!
